Pumpkin Spiced Overnight Oats

Until just recently I had mixed feelings about overnight oats. But all of a sudden they popped up everywhere. So I finally made a batch and it totally convinced me. Overnight Oats are my new best friends – in terms of food. They are like cold porridge with less hassle.
I am a huge fan of meal prep. Overnight oats make the perfect #GrabAndGoBreakfast for busy mornings. Get your mason jars out!
I ended up with two full mason jars for this amount of ingredients. I added a generous gulp of cold coffee to one of them because I was curious to see if it would make a difference. And `Hello! – Overnight Oats!´ You can’t really taste the coffee, but the flavour is more intense. Just leave it out, of course, if you don’t drink coffee.

Pumpkin Spiced Overnight Oats – Recipe Card

I feel pomegranate adds a nice finishing to this dish. This is when you can get creative and give it a personal touch. Add your favourite fruit, nuts or seeds on top or even any sort of nut butter.
