This recipe is part of my ‚1 squash – 4 dishes‘ series. It’s magical!
The sauce is made with butternut squash, cashew milk and nutritional yeast. These ingredients make the dish extra creamy and very delicious.
You can use ready-made pumpkin puree. However, making it from scratch is really simple. The easiest way for me is roasting the squash halves. Another way is to steam or cook the squash in cubes.

I need to tell you that this is a delicate subject for me.
One evening, during the very first months of dating Philip, he asked for macaroni and cheese and if we could make it from scratch. My initial thought was that it comes in a box, where you only have to add some liquid and voila! So how difficult could it be making the homemade version? … yet, it turned out to be the failure of my life! It is that kind of story Philip will tell our grandchildren…
Let me tell you why: So we went to buy some ingredients and Philip said he will get us a ‚beautiful,’ ‚delicious‘ orange cheddar cheese, freshly from the cheese counter. Back home I felt confident enough to cook this without a recipe (this is what I used to do and it proved to turn out well 99 out of 100 times). Well, the 1% happened this evening.
While the pasta was cooking, the milk for the cheese sauce was simmering. We chatted, enjoyed ourselves and it was time for the cheese to enter the hot milk mixture. It looked all very professional and smelled delicious, we were starving. So the cheese went into the pot, I stirred the sauce and stirred some more. But instead of melting into the liquid, all turned into lumps and then even bigger lumps. In the end, my sauce ended up in being one big cheesy ball.
This evening we had pasta with half of a cheeseball each. I have to live with this story ever since! 🙂
So when I served him my vegan, butternut squash mac & cheese last evening, I shivered inside I’ve tasted the sauce at least a hundred times to get the seasoning perfectly right.
And what can I say – he loved it! The crispy breadcrumb topping convinced him to try the dish. Who could possibly resist a good breadcrumb topping?
