Since having lived in London, I’ve become obsessed with hummus. It’s one of my favourite things in the entire world. Perfect if you want a savoury snack which is healthy but at the same time tasty, quick and easy.

I can’t stand raw garlic, so I always use caramelized garlic. It is super simple and is a really good cupboard ingredient. Just pop a garlic bulb in the oven while you are roasting the beetroots (+190°C/375°F). It takes about 45 minutes until the garlic turns golden brown. Just squeeze the cloves out, mash and store in a glass jar with some salt and olive oil.
You will need to add a good amount of lemon or lime juice, but you can always start with half of the amount and see if that is good for you. Add more if you like to make it more ‘lemony’.
In case you haven’t heard about aquafaba: it is simply the chickpea cooking water to make the hummus very smooth.
